Chocolatier

Reporting to the culinary leadership team, the Chocolatier manages and oversees the production of all chocolates and confections. This includes, but not limited to molded bonbons, truffles, barks, plated dessert garnishes, caramels, marshmallows, toffees and other specialty items. Assist in complying with all applicable sanitation, health and personal hygiene standards and following established food production programs and procedures. The Chocolatier is responsible for appropriate use of facility supplies and equipment to minimize loss, waste and fraud.

Chef de Partie- Meat

The Chef de Partie is responsible for the meat station. Prepares and/or directs the preparation of food to be served, complying with all applicable sanitation, health and personal hygiene standards and following established food production programs and procedures. The Lead Cook is responsible for the appropriate use of facility supplies and equipment to minimize loss, waste, and fraud.

R&D Chef

The R & D Chef is responsible for assisting with research and recipe development for savory offerings of premium, high end catering company. Includes development of hors d’oeuvres, appetizers, entrees, salads and side dishes, buffet presentations, and food station experiences. Daily activities include researching, prepping, cooking and R&D data management for Occasions Caterers and its customers.  The R&D Chef is not responsible for pastry or dessert items.

PM Manager on Duty

The Manager on Duty reports to the Transportation Manager and works with him/her to ensure events are dispatched on time. Primary responsibilities include managing vendors on the dock, answering and responding to emergency calls, and managing the transportation team in the building and on the road.
